Hunters quarter
Hunters Quarter is a relaxed and elegant dining destination, located in the Pooles Rock Vineyard of Pokolbin, in the heart of the picturesque Hunter Valley.
Known as HQ to locals and regulars, we offer modern Australian cuisine, driven by high quality seasonal local produce, and relaxed and attentive service.
Head chef, Brian Duncan brings a wealth of global and local experience in fine dining to HQ, having worked at the Dorchester Hotel and Claridges Hotel in the upmarket area of Mayfair in London, and also at Level 41 and The Establishment, two of Sydney’s premier restaurants. Brian’s breadth of experience and exposure to a variety of world cuisines bring a unique and refined quality to his product, and his philosophy on food is based on simple, fresh, local and seasonal produce. The HQ wine list will mainly focus on local wines, and will also offer some interstate and international wines.

Mayers fine food
Arriving in Australia like many other displaced migrants from the chaos of Europe during WW2 and facing the limited appeal of the customary Australian diet of the time, F Mayer Imports was established by Fred Mayer in 1957. Fred’s knack for business and entrepreneurial tendencies were evident at an early age. Whilst living in Palestine (and only 15 years of age) Fred became the self-appointed manager to eight Austrian and German hot dog vendors. He would deliver by foot all their supplies (meat, bread and condiments) and even developed a rotating roster of which locations they could sell from. It became so successful it led to a job at a local small goods company.
F Mayer Imports had humble beginnings, initially importing Norwegian jumpers and ski wear. Heavy import restrictions at the time limited food imports to just Swiss wafers and Danish and Swiss cheeses. When these import restrictions were lifted, Fred was able to increase the range of imported food products to satisfy the growing post-war demand in Australia for European food delicacies and specialty goods.
In an extract from a past interview, Fred recalls “When we first arrived in 1950, Australian food was a real oddity. You would go to a restaurant, it would look great, clean and tables with white tablecloths but all that was on the menu would be meat pies and sausage rolls”. But this all began to change during the 1950s and there was a strong fledgling market for continental foods by 1957 when Fred established the business.
Like many success stories, Fred started F Mayer Imports from his garage at his home in Bondi, where the imports were initially housed. Then, when he started importing cheeses and more perishable goods, he rented cool rooms in Ultimo. Over time, Fred (later accompanied by his sons) built the business up and relocated to larger warehouses in Rosebery, followed by Alexandria and then Mascot. Today, Mayers spans over two large warehouses in Banksmeadow, Sydney and Altona North in Melbourne.
The Fred Mayer Scholarship was established in 2018 and provides opportunities to junior athletes who need assistance in the pursuit of their goals. The scholarship provides funding support to athletes that would otherwise be disadvantaged in not being able to represent the National Team because of financial constraints.
Fred started playing water polo whilst living in Johannesburg and played many competitions during his time in the sport. He was a devoted supporter of the sport in Australia. Knowing how much he loved the sport, his sons Sam and Robbie, donated The Fred Mayer Scholarship so that the legacy of their father could live on. When asked about his father, Sam explained:
“Fred might not have played Water Polo at the highest level, but no one has achieved more pleasure playing, watching or talking about Water Polo.” The recipients must replicate Fred’s ethos and sentiments.

Olson gallery Woollahra
OLSEN gallery was established in 1993 and exhibits a broad spectrum of Australian and international art, in the gallery, online, and at art fairs.
Gallery founder and director Tim Olsen has cultivated a stable of artists that he feels presents a comprehensive and poignant view of the contemporary arts in Australia. With a continually changing exhibition calendar we showcase the work of both emerging and established artists. We have nurtured the careers of artists from their first exhibition out of art school and proudly see them now as leading lights in the Australian art scene.
Foremost in the gallery's stable is the late John Olsen, who is today regarded as one of Australia's most esteemed artists of all time. In addition to the staging of countless critically acclaimed exhibitions the gallery has hosted the launch of many books devoted to his unique and ingenious art making. Tim has also negotiated the sale of some of the most significant paintings in Olsen's oeuvre to both private and institutional collections. Tim's enthusiasm for curated projects has inspired the designated ANNEXE space, which now resides directly behind the main gallery at 74 Queen Street, Woollahra.
With a definite focus on the work of Australian artists, we are actively fostering a dialogue between Australian art and our international colleagues with exhibitions of leading contemporary artists from Europe, Asia and America being planned for the coming years. Evan Hughes, from the renown Ray Hughes Gallery, established in 1969, will bring international and local contemporary artists and audiences together.
In 2017 we opened a space in New York situated in the lively lower east side, as a space for both Australian and international contemporary artists. OLSEN Gallery NYC is operating temporarily online only.
In 2024 OLSEN began a partnership with Brett Ballard Art. Brett was the former Head of Art at Menzies Art Brands, Sydney and before that an extended period as a Senior Specialist, Art with Sotheby's Australia (now Smith & Singer). Ballard works closely with clients consulting on collection management and the buying and selling of art in the secondary market.

Karen is an Accredited Clinical Nutritionist consulting in Sydney’s Eastern Suburbs. Karen has always had a passion for health and design. After graduating with a Bachelor of Design she worked for several globally leading design and advertising firms in both Sydney and Hong Kong. Her love of fitness and movement led to the Polestar Method of Pilates where she graduated after 600 hours of training in Mat, Reformer and Studio Pilates. While teaching Pilates for the last 8 years, she has continued to study Classical Pilates.
Growing up with brothers who were athletes, nutrition has always been an area of interest. So much so, that Karen studied a Bachelor of Nutrition and Dietetic Medicine with a HD average which enables her to help people to be the healthiest version of themselves.
Karen has a natural ability to meet people where they are at with empathy and non-judgement. Goals are created together with an authentic desire to achieve optimal results. Being married for 25 years and a mother of two, Karen is well positioned to consult families and cater to men and children. Karen has a special interest in longevity, maximising body composition (fat loss and muscle gain), gut health, athletic performance, osteoporosis, food intolerances, diabetes and metabolic disorders, hormone balance, fertility, cardiovascular disease and optimisation of all body systems.

At Glaze Galleria, we bring the artistry of handmade ceramics into your home. We strive to share our deep love of clay and knowledge, so you can craft pieces with passion and patience.
The thing I Ioved about pottery, from day 1, was the way it focused my mind. Even when it wasn’t going well in those early days, in my garage, I felt relaxed and rejuvenated every time I touched clay. It’s taught me to embrace all that is not perfect and just be the best you can be. Keep learning, trying and challenging yourself. Then repeat! Just like life really.
Glaze Galleria was established to be able to share that “Clay therapy” with my local community, in Canada Bay. The locals have shown us amazing support and we now also get students from anll around Sydney. We have an amazing group of talented teachers and I’m proud of the community that we’ve created.
During our classes, you learn that the process is just important as the end result. You don’t have to be creative to get started. Give it a go - it’s an experience that you’ll always treasure!
